The Godello variety is a grape with an exuberant and aromatic content, although it is at the same time highly complex. It is also versatile, which means it can adapt to different climates and terroirs. After diverse experiences with the variety since 2013, we started making this wine with the 2015 harvest.
Pyjama Godello combines a generous structure and the glycerine content of the white wines from the nearby Valdeorras, with the rusticity and nerve of our wines from El Bierzo.
Our aim is to reach the optimal state of ripeness for controlled winemaking in stainless steel vats, together with ageing on fine 5-month lees – 80% in the vat and 20% in 225-litre barrels.
The wine is yellowish lemon in colour with shades of green. Its aroma is based on white stone fruits, although there is also an attractive mineral component. In the mouth it is both spacious and fresh, with a bitter aftertaste that is very characteristic of this varietal.
